湖南省位于长江中游，孕育了灿烂的湖湘文化。湖湘文化在历经先秦湘楚文化的孕育，宋明中原文化等的洗练之后，在近代造就了“半部中国近代史由湘人写就”的盛誉。伟人毛泽东的家乡，就在湖南湘潭，毛氏红烧肉，就出自主席的故乡。Located in the middle reaches of the Yangtze River, Hunan Province is the birthplace of the splendid Huxiang culture. This culture developed from the Xiangchu culture of the pre-Qin period and was shaped by the Central Plains culture during the Song and Ming dynasties. In modern times, Huxiang culture gained a strong reputation, with the saying that “Hunan people wrote half of modern Chinese history”. Xiangtan of Hunan Province, is the hometown of Chairman Mao Zedong, and it’s also where Mao’s braised pork in brown sauce originated.

毛氏红烧肉以猪五花肉为原料。Mao’s braised pork in brown sauce mainly uses pork belly.

它不同于其它省份的红烧肉用酱油烧，而是用糖加盐为肉着色调味。Unlike other regions that usually use soy sauce for braising, this dish gets its color and flavor from sugar and salt.

这使得毛氏红烧肉色泽金黄、油而不腻、咸鲜不失、甜味兼得。This gives the pork a golden hue and a rich taste that isn’t too greasy, achieving a nice balance between salty and sweet.

中国商朝时，甲骨文中的“家”字，就是由一间房和一头猪组成，意思是家庭的幸福生活，要从养猪开始。Back in the Shang Dynasty of China, the character for “home” in oracle bone inscriptions consisted of a house and a pig, suggesting that a happy family life starts with raising pigs.

同时在汉语中，红烧肉的第一个字发音“红”，它和成语“鸿运当头”的第一个字发音相同，所以毛氏红烧肉又有走好运的美好寓意。Also, the first Chinese character for “braised pork in brown sauce” is “hong”, which sounds like the start of the idiom “hong yun dang tou” (lit. good luck). So, Mao’s braised pork in brown sauce is seen as a dish that brings good luck.
